RESISTANT STARCH STUDY DIETARY INFORMATION

If you participate in the Resistant Starch Study, you will be required to eat three different diets in four 2 week sequences (for a total of eight weeks).

Everyone will begin by eating the baseline (control) diet (20% protein, 40% carbohydrate, 40% fat). After the baseline diet, you will be assigned to either a higher (A or B) or lower (C or D) carbohydrate diet group, and received in random order a diet which is either high or low in resistant starch for 2 weeks. Baseline Diet Diet A or B Diet C or D

20% protein
40% carbohydrate
40% fat

20% protein
55% carbohydrate
25% fat

-Diet A will have high levels of resistant starch
-Diet B will have low levels of resistant starch

20% protein
40% carbohydrate
40% fat

-Diet C will have high levels of resistant starch
-Diet D will have low levels of resistant starch
